Organisational Context

Global Generation is an educational charity, which works together with local children and young people, businesses, residents and families in Camden, Islington and Southwark to create healthy, integrated and environmentally responsible communities. We offer practical experiences and employment pathways to young people, often from disadvantaged backgrounds, and give them the social, emotional and practical skills to make a difference in the world. The Skip Garden Kitchen is currently at the heart of our most public facing garden in King’s Cross: The Skip Garden. Through the cafe we provide food daily to visitors to the garden and cafe, feed the hungry workers of Global Generation, work with volunteers and young people, develop inspiring and magical evening events, partner with others to deliver unique dining experiences within the garden and beyond and offer off-site catering to local businesses. We describe our food as being vegetarian with a vegan leaning. After 4 years of running the cafe and events, we are now ready to take our food offer a step further and are looking for a Catering Manager to develop and manage this growth.

Job Purpose

This is an exciting time for Global Generation, we now have the opportunity to grow our food business both at the Skip Garden and across new sites, including the Story Garden at the back of the British Library (from May 2019) and from a barge on the canal at Granary Square (from October 2019). As the Catering Manager, you will be growing our catering income through private and ticketed events, developing opportunities for off-site catering and developing the cafe and food offer on the barge. You will be responsible for all aspects of our food offer in King’s Cross ensuring it runs smoothly and efficiently and lead on menu development and business development, in line with our values, recruiting and managing our team of chefs, freelancers, interns, young people and volunteers. You will be responsible for maintaining our equipment in good order, and for Health and Safety oversight for our kitchens in King’s Cross.

You will be responsible for ensuring that our food offer (catering, cafe and events) is profitable. All income generated plays a key role in supporting our educational and community work.

You will work closely with the garden team to ensure that ingredients used in the food reflect seasonality and what is growing in our garden.

Main Duties and Responsibilities

This role involves a combination of office and kitchen based work. At this stage we anticipate that it would be approximately 3 days office based focusing on the developmental aspect of the role and 2 days kitchen based working in the cafe so as to keep in touch with cooking, creatively working with food and working alongside the other chefs.


We are looking for someone enterprising and with solid business experience to help shape and grow the future and success of our food offer. As the Catering Manager you will:

  • Be responsible for developing and implementing a business plan and working to targets
  • Managing our food offer across sites
  • Be responsible for developing new opportunities in order to grow Global Generation’s food offer and increase income generation, especially linked to opportunities on the barge in the form of a cafe and events, and external catering
  • Support the promotion and marketing of the Skip Garden Kitchen and venue hire

Building on existing practices and successes

We are looking for someone who is able to work in a collaborative way with the rest of the team and who is willing and able to build on the successful work done to date. You will:

  • Consolidate and build on existing practices and systems into a coherent system that can be followed by all chefs, freelancers and volunteers across sites, ensuring consistency and quality control; including food/drinks offer, food safety, costing of dishes and customer service
  • Be responsible for the food brand and oversee menu development, ensuring our offer reflects the aims and vision of Global Generation
  • Further develop the food philosophy and practices, looking at social, health and environmental impacts, with the input of the team and promote this
  • Develop Skip Garden Kitchen recipes
  • Continue to develop ways to make our food offer inclusive to those on lower incomes
  • Create and cook inspiring and delicious seasonal food in our cafe, leading on events and catering
  • Be responsible for administration linked to our food operation including: managing budgets, catering briefs, client liaison, menu costing, staffing, training and recruitment
  • Ensure the kitchens and outdoor food sites are kept to a high standard of cleanliness, in keeping with all the current HACCP guidelines. Oversee Health & Safety, Food Safety and Hygiene administration and training for Skip Garden Events


We are looking for someone who loves running magical events, so someone who is both creative and super organised. You will plan and run events from small intimate dinners, to outdoor fire feasts and weddings. You will:

  • Develop the menus and plan the prep sheets
  • Hire and coordinate the team of chefs
  • Cost out the food at the events ensuring that we are making a profit
  • Run and manage some of the events
  • Work closely with Events Manager on design and delivery

Managing the team

We are looking for someone who is efficient and able to get things done, whilst being supportive and able to bring out the best in others. You will:

  • Be responsible for ensuring the right team is in place to deliver the vision
  • Manage the kitchen team - cafe lead, cafe chefs and event chefs
  • Be responsible for hiring freelance chefs for events
  • Work collaboratively with the team of chefs, freelancers and volunteers; events team; garden team and education and community team

Skills & Experience

  • Experience of managing commercial kitchens or catering businesses and at least 3 years as a chef in a commercial kitchen environment, such as a restaurant, busy cafe or catering kitchen
  • NVQ Diploma in Professional Cookery or equivalent work experience
  • Experience of working to targets and managing a budget
  • Practical experience of planning and delivering catering for events of 150+
  • Experience of managing a team and rota of chefs
  • Creative and passionate about sustainable food, with specific experience and interest in cooking vegetarian seasonal food
  • Excellent communication and administrative skills
  • A very flexible attitude - there is a lovely atmosphere at the Skip Garden but we also work long hours and need to be flexible depending on what is on and what is needed
  • Able to stay calm under pressure
  • Interest in working outdoors and passion for the natural environment
  • Empathy with Global Generation’s ethos
  • Level 3 Hygiene Certificate
  • Experience of using a wood fired cob-oven (desirable)

  • Represent Global Generation
  • Be the main key holder for The Skip Garden Kitchen
