The Level 2 Award in Food Safety in Catering will help you to meet your responsibility to keep children, young people and adults safe when preparing and cooking food outdoors.

The training addresses the safety needs of food handlers, with an added emphasis on outdoor settings, and is particularly suitable for environmental educators or Forest School leaders.

The aim of the day is to combine the theory of food safety with the practical skills of cooking lunch together on a campfire, whilst developing good practice guidelines in a fun and interactive way. Training topics will include:

  • Importance of Food Safety in the woods incorporating HACCP 
  • Microbes – Where are they “lurking”?
  • Illnesses linked to food and the outdoors Hygiene Control - Temperature control, Storage, Handling, Preparation, Cooking, Equipment … 
  • Personal Hygiene 
  • Food Safety Control – planning a HACCP relevant to your practice.

The training ends with a multiple-choice test. After successful completion candidates will receivea certificate from Qualsafe and a ‘Blake Training’ certificate, personalised with the additional outdoor food safety topics covered.
